Primary use of a grain vac is to pick up grain from piles dumped on the ground as temporary storage during harvest. Such piles can be built using grain rings, large round straw/hay bales or anything else available to make a retaining wall. Filled with grain then covered with a tarp makes cheap and quick storage. Grain is also stored in plastic tubes somewhat like 10 foot diameter sausages 100 feet long. Problem then arises as to how to clean up the piles---grain vac to the rescue. Anybody who has every shoveled grain will be quick to appreciate the availability of the machine.
Another and probably one of the reasons they were developed is to clean grain out of flat bottomed bins, a job previously done with a grain sweep or a grain shovel.
