The economics probably don't work for it, but imagine the absolute joy you'd see if you turned a bunch of hungry pigs out on this field after harvest.
It is very possible that some kind of livestock get to feed on that residue. I have a neighbor who has sheep. Every year, right after Halloween, a pile of pumpkins gets dumped in the field the sheep graze. In about a month, there is no trace of the pumpkins.
