What about the big hunk from the middle? Beams?

That particular log is usually called a 'bolt' (short length), a favorite source of lumber for the pallet and furniture industry. Bolts are frequently cutoffs, leftovers due to logging for specific length logs or trying to make some straight lengths from curvy logs. The big hunk in the middle is called a 'cant'. If cut from a higher quality (and longer), log it could be a beam, lesser quality logs could produce a 2sided (as above), or 3 or 4sided landscaping tie. Cants (depending upon their dimensions), can also be processed using an edger (usually a single or 2 bladed machine with a fence using multiple passes), or a gang saw (lots of blades and horsepower using a single pass), to create quality dimension stock lumber.
