Better than nothing, but the human body never react exactly like the crash dummy did. The feet would probably go under the bottom of the pillow then the person would be rolled under it. If they had their back to the train they might be knocked down hitting face first smashing the nose and fracturing many of the facial bone structure, But the most likely scenario would be a person trying to outrun the train. the driver might hesitate and delay the deployment.
The best case would be for people not be stupid enough to be on the tracks of an oncoming train, but some people will always do that one stupid thing in their life but, probably only once. Hopefully they live and learn from their mistake.

I dunno, the first thing the "pillow" does is scoop up the dummies feet (pause at the 13 second mark) kicking out the center of gravity then it wraps around while the train is stopping and basically drops the body.

They have the "feet under the pillow" thing covered.

Pedestrian catchers have been tried since the 1920's so far none have proved to meet minimal safety requirements to cause them to be seriously considered as a viable way of reducing injury or death to the point of installing them on just about anything.
Air bags in cars would never have been made standard in vehicles without the lobbyist. Since without the occupants being properly belted in their seats the air bags can and do cause as many injuries as they prevent.
Most people who buy used vehicles don't know they may have an instrument of death right in front of them if that vehicle has not had a recalled air bag replaced

Probably triggered by the engineer or operator. Most likely to prevent suicides, or pedestrian accidents.

I wonder how many people get hit by a train while they are in the middle of the track?

The worst part for me, is the engineer/driver is always to blame. Even though these trains can't stop on a dime, and if they could, passengers would get hurt.
