A lot of that is done onboard fish processing vessels. Some of those things can stay out in the ocean for 3 -6 months and fish as well as receive fish from other fishing boats and process those! a few are over 1000' long and have a crew of over 300 total. A lot of the frozen fish at the store come from these and it is some of the freshest seafood you can get (especially inland areas). Think about a live fish going straight to the factory still flopping around and a few minutes later filleted and flash frozen in a bag that may go into a package that you can get at your local grocery store! I didn't used to like fish growing up because it always had a fishy smell. Now I thaw a filet and it smells fresh, like the ocean. Very impressive ships!
