    This makes sense as the torches make ionised gas particles from the flame plasma, which would give the electricity a path to follow.

    The flame will change from sorta pointed (flame shaped) to a shorter, flatter profile. Here's an example of that behavior with a high voltage AC source. You don't have to have a visible arc for the flame to be deformed, and this will work with HV DC, also.
