    Happy Thanksgiving everyone!

    I'm curious about our members' turkey strategies this year. What are everyone's bird plans? We used to deep-fry, but my toddler is on a 24/7 mission to cause pint-size vandalism wherever possible, so I'm too nervous to have a boiling cauldron of oil anywhere near him.

    I hope to someday reprise a previously successful turducken, but I couldn't budget in the time this year. So, it looks like we're going to dry-brine and roast, probably with some help from SeriousEats recipes. I'm also considering spatchcocking the bird.

    "spatchcocking" - that's one I had to Google. I'd probably call it "butterflying", but I'm always up for learning something new. I'll trot out the new vocabulary on Thursday and see if anyone else has heard the term.
