    Handheld potato slicing technique. I always find myself counting the person's fingers when I see GIFs like this.

    SO many of these guys never look at what they are doing this may be because they have done it for so long they rely solely on muscle memory which in many cases is more dependable than eye contact.

    If you watch closely, it is using his fingers to touch off on the side of the blade to keep his orientation correct.

    They work on the ground like that because they CAN. No need for a table when they can be comfortable like that.

    That’s not sped up. With enough practice you need to slow open a video to see a chefs movements.
