It keeps track of who is next in line. It gives the person a number and remembers it even if they move out of the camera for a moment.

Does the same thing real bartenders used to be able to do. before the electronic wizardry bartenders were able to recognize every patron at a glance tell them what they had ordered the previous visits tell each one how many drinks they consumed and know when a patron was getting to the point of needing to call them a cab then ask them for their car keys. or to start watering down their drinks a little more so they could extract the last few bills out of their wallets before they were too plastered and had to be sent away.
