These are of various ages as can be seen by the thickness. The cutting boards are all types of pine and are planed down when too many deep cuts are evident. The one on right will probably not be planed again but I will probably put it through a drum sander for one last rebirth.
I used to sell these at markets in the 80's and couldn't make enough, but imports & bamboo technology have reduced demand considerably except by friends & family.
I started the hole design when a lady approached me to make her one armed son a board so he could butter his own bread. She was well pleased with the hole on left end (only left hand) and right angled strips attached to right end with marine s/s screws.
The chopping block is laminated strips of Tassie Oak (various species of Eucalypt mostly found in Tasmania) and formaldahyde being the glue. I dont use that any more as yellow glue like titebond 2 or 3 is much safer but that board is 30 years old.
These are easy & if you dont have a planer ot thicknesser use hand tools or buy DAR pine .
I spray with extra virgin olive oil as it helps keep germs at bay and acts as a preservative.
