    somebody should have been doing a better job of directing the cranes to boom up of boom in.
    The second crane was beginning to be pulled over at the end of the vid.

    Do cranes have a quick release for such occasions?

    There is generally not a quick release to drop the load from the hook the exceptions are for specific purposes such as dropping a penetrator for bore hole work or dropping something for impact testing then an electronic controlled release trigger mechanism or an explosive bolt will be used between the hook and the object to be dropped.
    Like I said previously either booming up while cabling out or booming in while cabling in would have adverted the violent swing of the trailer causing the crane to fail.
