ditto on it being a slicer blade - we used them in the asparagus processing plant, but we sharpened ours by bringing up an angle grinder to the spinning blade and doing it free hand. - I was always twitchy working there, guarding on the machines was not done, and working all day with your hands wet reduced the sensations in your fingers, leading you to get too close to moving bits, or collect a cut/splinter and not feel it until later in the day. Given the asparagus was irrigated with washdown effluent from the piggery, getting the water in open wounds was not the best. We only sanitised the product just after prep and packaging to reduce waste of the sanitising solution.
