People have been physiologically conditioned to believe food tastes better when it is made pretty. World renown chefs make some of the most eye pleasing dishes while much of their prepared food is poorly seasoned and tasteless, But it is pretty so they get paid big bucks. Cheese quickly loses its nutritional value and taste with the more surface area it has and the longer it is exposed. a few bites sized cubes will taste so much better when eaten than those rosettes, organized on a chafing dish.
Example, my wife likes to buy shredded sharp cheder to put on her tacos when we have taco Tuesdays, I shred mine from a block as needed, She likes to cut off a chunk of mine and just eat it like that but once I was out of block cheder, so she grabbed a hand full of her shredded cheese. This doesn't taste as good as the block cheese she said. Of course, not it has lost its flavor and nutritional value in the bag I keep mine wrapped tightly to prevent air from ruining it, that is why block cheese tastes better.
Never try to tell me it can't be done
