Probably done to appear progressive at the time, when Mammy-themed objects were considered wholesome and inclusive Americana items.
Related: look how original Aunt Jemima syrup has shot up in price since the brand was retired and replaced by "Pearl Milling Company". About twice the price on Amazon, and much higher on Etsy.
